Frankly, had I to do it all over, I'd have gone your way and pushed our shop to VMWare or KVM. Simply because Microsoft seems to treat AMD-V as a red-headed stepchild, and they still don't support nested virtualization on any AMD processor (including the new Epyc processors). I think on some Intel motherboards in the past, the motherboard manufacturers also have control of whether or not to support Virtualization, so it's safe to assume that AMD will have some sort of "AMD-V" technology for Ryzen, but motherboard manufacturers might have to implement it into the chipset.
