as you've probably realized, minecraft java has no native support for controller inputs. you will need a 3rd party program that translates controller inputs to keyboard presses.

Well controller support is built into windows so long as its a wired controller (you can buy an adaptor for a wireless one though. For the 360 style crafting menu though, I wouldn't know where to start, there may or may not be a mod out there that does that.
