I am using a Legacy BIOS that doesn't support 3TB hard drives. When I install the hard drive and boot with Windows 7 Pro 64-bit it shows the drive space available for installing as 2048GB and 746GB on 'Disk 0'.

I just returned the 3TB hard drive. I discovered to my surprise (and Hitachi Techsupport said to theirs) that while the Hitachi software* enables XP to access the 3TB hard drive, only one OS on one computer can do so. If you move the drive to another computer, or if you reinstall your OS, the data is all lost.
