If you could properly get Eve to recognize and allow you to map a joystick, then I don't see why you couldn't. Why you would want to is another story altogether though. You don't actually "fly" your ship, like you would an airplane in a flight simulator as everything is point-and-click.

I have the steam controller and not using the custom configs IS awful. Launch Eve using Steam Beta BPM, change the configs, and it's amazing. I have back and shoulder issues and having a KB and mouse in your hands has really been a big plus for me.
