With AMD cards you can see if the card supports Eyefinity, this means the card supports 2-6 monitors (2 - 3 per card, with 2 cards up to 6). Also, you can check reference cards for supported outputs, and some sites will let you sort by number of outputs supported. Although, to my knowledge just about every card sold now supports dual monitors.

If you're going to install an add-in video card, I don't know why you'd need a USB>video dongle too. Assuming the video card supports at least 2 monitors (one using the HDMI port, and one using another port on the card) you will still be able to use the onboard HDMI so that gives you at least 3 monitors.
